300g (11oz) parmesan, finely grated
METHOD
Preheat the oven to 190C/375F/gas mark 5. Line a tray with greaseproof paper. Sprinkle parmesan evenly inside several ring cutters. Remove the cutters and bake for 4 minutes. The tuiles are ready when slightly bubbly and golden. Remove from the oven and use a palette knife to transfer the discs onto a wire cooling rack. Allow to cool and store layered in greaseproof paper in an airtight container until ready to use.
